    We had 2 shanks as part of our Xmas meat order and I was delighted with the quality of the meat. Seared then slowly cooked on a low heat in a casserole with carrot onion and celery in a lamb stock with half a bottle of decent red wine rosemary garlic and a touch of mint. After about 3 hours the meat was ready to cleanly fall off the bones and was wonderfully succulent and tasty. So pleased with the purchase
